Bread Baking Basics


There’s a rhythm to bread baking — and in this foundational class, Amber Eisler, Director of Baking Education, will help you find it. Designed to build confidence and deepen your understanding, this course walks you step by step through the essential stages of making bread so you can better interpret what your dough needs at every point along the way.

You’ll explore mixing, kneading, dough development, bulk fermentation (first rise), dividing and shaping, proofing, baking, and cooling — gaining the skills to make thoughtful observations and adjustments as you go. As you practice, you’ll begin to “talk to the dough,” developing instincts that carry over from one recipe to the next.

Along the way, you’ll bake five delicious breads: Pita Bread, Pain de Mie, Super Seed Bread, Ciabatta, and a Giant Sticky Bun. By the end of class, you’ll have a strong foundation you can apply to any bread recipe — and the confidence to keep learning through repetition in your own kitchen.

On-Demand classes can be taken at any time, and can be re-watched over and over again, letting you learn at your own pace.

After purchasing your class a link and access code will be emailed to you. Click the link to be taken to your class and enter the access code. You will be granted access to the class immediately.

Yes. A downloadable recipe workbook comes with every class.

You can watch your On-Demand class as many times as you want! Classes are guaranteed to be viewable up to one year from purchase date.

Purchased classes will be available to you as long as the On-Demand school is active. This will be at least one year from your purchase date, and likely much longer.

King Arthur offers three type of baking classes, all taught by our expert bakers:

  • In Person classes take place in our schools in Vermont and Washington.
  • Live Online classes are scheduled group classes taught via Zoom®. This interactive format allows you to ask questions of your instructor and interact with other participants.
  • On-Demand classes are video-based and available 24/7—you watch them at your own pace, whenever you want, as often as you want!

No. Sales of On-Demand classes are final.

No. Each purchase of an On-Demand class admits one registered student.

After purchasing an On-Demand class you will receive an email containing information about your class.

To gift a class, send the link and access code to the person you would like to give the class to.

Please Note:

  • Each access code may only be used once. If you give your access code to someone else, you will not be able to access the class yourself.
  • A King Arthur website account is required to view On-Demand classes. The recipient will be prompted to create one (or log in) when they visit the link.
