Building on the foundation of Sourdough for Beginners, this course explores five unique sourdough recipes while introducing advanced techniques to enhance flavor, structure, and texture. You'll learn how to use autolyse for better dough development, strengthen dough through folding instead of kneading, and work with high-hydration doughs to achieve an open crumb. The class also covers how to incorporate inclusions like grains, chocolate, and savory add-ins while maintaining structure, as well as shaping techniques such as preparing a baker’s cloth for a batard and going big with a honey beer miche. You'll refine essential baking skills like scaling ingredients, maintaining proper dough temperature, scoring, and achieving a full bake, all while gaining confidence in adapting techniques to fit your baking style. Along the way, you'll explore tools like a cloche and covered baker to trap steam and learn how to apply washes and glazes for a beautiful, flavorful crust. With recipes including Pain au Levain, Honey-Beer Miche, a Seeded Sourdough loaf, Chocolate Sourdough, and Bacon Date Fougasse, this class will deepen your understanding of sourdough and open the door to more creative, precise, and delicious results.

You can watch your On-Demand class as many times as you want! Classes are guaranteed to be viewable up to one year from purchase date.

Purchased classes will be available to you as long as the On-Demand school is active. This will be at least one year from your purchase date, and likely much longer.

King Arthur offers three type of baking classes, all taught by our expert bakers:

  • In Person classes take place in our schools in Vermont and Washington.
  • Live Online classes are scheduled group classes taught via Zoom®. This interactive format allows you to ask questions of your instructor and interact with other participants.
  • On-Demand classes are video-based and available 24/7—you watch them at your own pace, whenever you want, as often as you want!

No. Each purchase of an On-Demand class admits one registered student.

After purchasing an On-Demand class you will receive an email containing information about your class.

To gift a class, send the link and access code to the person you would like to give the class to.

  • Each access code may only be used once. If you give your access code to someone else, you will not be able to access the class yourself.
