Our white rye flour has the bran and germ removed, creating a lighter loaf, milder in flavor, with just a hint of rye. The flavor is preserved, so you still get all of the classic rye bread taste you love. It can be added to muffins, scones, and pizza doughs to ""soften"" the flour — the rye flour dilutes the wheat flour's gluten, making it more tender. Try substituting up to one-third white rye flour in your recipe.
