High Altitude Baking:
Want a lighter-textured cake? Bake in three 8" round pans, rather than two pans. For an old-fashioned, denser, close-grained cake, bake in two 8" round pans.
Instructions for baking in a 9" x 13" pan: Mix as directed, spoon batter into greased and floured 9" x 13" pan, shake gently to level batter, and bake until top is light golden brown, a cake tester inserted in the middle comes out clean, and the cake begins to pull away from the edges of the pan, about 33 to 36 minutes.
