The baking stone surface will increase in temperature the closer it is to the flame. We find that once the oven is preheated, turning down the heat and rotating pizza regularly will help cook it evenly and avoid over-cooking. We do not recommend using parchment paper with the Koda 16 as the temperatures are too hot.
